Mexican lasagna墨西哥烤寬麵條

 

 

 


Today I’m sharing this super yummy dish: Mexican lasagna. My all time favorite food is Mexican. I could eat it every single night! So I decided to take one of my favorite recipes, taco soup, and turn it into lasagna! I used a lot of the same ingredients and it turned out so yummy. It has the such a great flavor! My hubs raved about it the whole night! Score!

Mexican lasagna

Ingredients

  • 12 small corn tortillas
  • 1 green pepper (core removed and diced)
  • 1 red bell pepper (core removed and diced)
  • 1/2 onion, finely chopped
  • 1 can rotel
  • 1 lb ground beef (could also use ground turkey or shredded chicken)
  • 1 TB taco seasoning
  • 1/2 cup salsa
  • 1 can black beans (drained and rinsed)
  • 1 can pinto beans (drained and rinsed)
  • 1 can corn (drained)
  • 2 cups shredded cheese
  •  
  • Optional toppings:
  • Sour cream
  • Olives
  • Cilantro

Instructions

  1. 1.       Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
  2. 2.       Brown hamburger in a frying pan over medium high heat. Add in onions and peppers and cook for about 3 minutes. Next add in rotel and salsa and stir until combined. Cook for another 3 minutes and then remove from heat.
  3. 3.       In your 9x13 pan layer 6 tortillas (they will overlap). Then sprinkle about 1/2 cup of cheese on the tortillas. Next layer half of the hamburger mixture and then half of the corn and beans. Add another 6 tortillas on top and repeat with the hamburger, beans and corn. Add the rest of the cheese on top.
  4. 4.       Bake for 30 minutes
  5. 5.       Top with sour cream, olives and cilantro.

墨西哥烤寬麵條

成分

  • 12小玉米餅
  • 青椒1個(核心移除,切粒)
  • 1紅甜椒(芯取出,切成小方塊)
  • 1/2洋蔥,切碎
  • 1可以ROTEL
  • 1磅碎牛肉(也可以使用地面火雞或雞絲)
  • 1 TB的塔科調味料
  • 1/2杯薩爾薩
  • 1罐黑豆(排水和沖洗)
  • 1罐斑豆(排水和沖洗)
  • 1罐玉米(排水)
  • 2杯切碎的奶酪
  •  
  • 可選配料:
  • 酸奶油
  • 橄欖
  • 胡荽葉

說明

  1. 1.       烤箱預熱至350度。噴9X13鍋烹飪噴霧。
  2. 2.       布朗漢堡在煎鍋中高熱量。加入洋蔥,辣椒,煮約3分鐘。接著加入ROTEL和莎莎,攪拌至混合。再煮3分鐘,然後離火。
  3. 3.       在你的9X13鍋層6小餅(他們會重疊)。然後撒上約1/2杯的奶酪上的玉米餅。下一層的漢堡混合物,然後一半的玉米和大豆的一半。添加另一個6餅的頂部和重複的漢堡包,豆類和玉米。添加在上面剩下的奶酪。
